Over-the-Top Texas Chili Ingredients

  • 1 lb. Bacon
  • 5 Chopped Bell Peppers
  • 5 Cloves of Garlic
  • 4 Small Cans Fire Roasted Diced Tomatoes
  • 1 Can of Chopped Tomatoes
  • 3 Cloves of Garlic
  • Meat Church BBQ Chili Powder to tast
  • Coarse Salt to taste
  • 1 Jalapeño Pepper with seeds
  • 2 Sweet Onions

Over-the-Top Texas Chili Instructions:

  1. Once the egg is heated to 375˚ the bacon goes in first (1lbs) chopped up until browned.
  2. Then add combo of 5 chopped up bell peppers (any color), 2 chopped up sweet onions, 3 cloves of garlic chopped, and one jalapeño pepper chopped (with seeds) added to the bacon for about 10 min. or until peppers and onions soften.
  3. Add 4 small cans of fire roasted diced tomatoes and one large can of chopped tomatoes to the mix.
  4. Cover Dutch oven with a grate for the ground beef to cook over the mix. 3 lbs. of 85% ground beef mixed with the recommended amount of chili powder then cooked on the grate until the internal temp is 145˚.
  5. Then chop on the grate until all the ground beef falls into the mix. After the grate is removed, mix everything together and cook for about 15 min. (add extra chili powder if needed).

*This recipe uses an 11 qt. Dutch oven. When using a 7 qt. Dutch oven, use only 2 lbs. ground beef and less tomatoes.
